Garden, Chicken, bicycle, recycle!
Do a 4 season garden and raise chickens for their eggs (In a place build mostly with recycled material, with solar and wind energy). This coud be for the community and the students at the university. Put some yellow bicycles that people could use for free or rent. Put banners and tell people about the importance of recycling, because a lot of them don't recycle...Start to have a system to take the compost at many places in town. Please, help my city to be healthier! :)
